Simple Jammy Biscuits

Ingredients
180g self-raising flour
20g of desiccated coconut
100g sugar (I used a mixture of brown and caster)
100g butter
1 egg beaten
4 tbsp of jam (I found some blackberry jam at the back of the cupboard)
Method
- Stick all ingredients except egg and jam in a food processor and blitz till it looks like breadcrumbs
- Stir in beaten egg and combine to a lump of dough
- On a floured surface form a thick sausage shape with the dough about the width of your wrist
- Slice this sausage shape into about 12 slices and lay on greased baking sheet
- Using the floured end of a wooden spoon or similar make a small indent in the surface of each biscuit and place about a teaspoon of jam in each one
- Bake in oven 190 (fan 170) C for about 15 mins until golden brown
